Crispy Omega Seed Crackers

Servings: 24 large crackers
Ingredients:
- 1.5 cups sunflower seeds
- 1/2 cup pumpkin seeds
- 1 cup sesame seeds
- 1/3 cup golden flax seeds
- 2 Tbsp Psyllium husk
- 2¼ cups water
- 1/2 tsp salt
- 1 tsp dried rosemary or your favourite herb
Instructions:
1.Combine all ingredients in a large mixing bowl. Add water and stir until everything is well combined.
2. If using any optional add-ins, mix them in now.
3. Let the mixture sit for about 20 minutes so it can thicken to a gel-like consistency.
4. Preheat the oven to 300ºF (150ºC) and line a baking sheet with parchment paper.
5. Spread the mixture evenly onto the prepared sheet in a thin layer (about 4–5 mm). Use two trays if necessary.
6. Bake for 1 hour. Adjust the baking time by about 10 minutes more or less depending on how golden and crispy you prefer the crackers. Watch closely toward the end to prevent burning.
*Optional for cleaner cuts:* After about 30 minutes of baking, remove the tray and score the crackers into squares using a knife or pizza cutter, then return to the oven.
8. Once baked, remove from the oven and allow the crackers to cool completely.
9. Break into pieces (or separate along the scored lines) and serve or store for later.
