Coconut Loaf Cake

Ingredients
- 115g butter
- cut into small pieces, plus extra for greasing
- 225g self-raising flour
- 115g demerara sugar
- 70g desiccated coconut
- plus extra for sprinkling
- 2 large eggs
- lightly beaten
- 12 - 14 tbsp milk
Method:
Step 1:
Preheat the oven to 160°C (140°C fan/gas mark 3). Grease a 900g loaf tin and line it with baking parchment.
Step 2:
Sift the flour and a pinch of salt into a mixing bowl.
Step 3:
In a separate bowl, beat together the sugar and eggs until the mixture becomes light and fluffy. Add the coconut and milk, and beat gently until well combined.
Step 4:
Gradually fold in the sifted flour mixture until the batter reaches a soft, dropping consistency. If necessary, add a little more milk to achieve the desired texture.
Step 5:
Transfer the batter into the prepared loaf tin, smoothing the surface with a palette knife. Bake for 40-60 minutes, or until a skewer inserted into the center comes out clean.
Step 6:
Remove the cake from the oven and sprinkle the additional coconut on top. Allow the cake to cool slightly in the tin before transferring it onto a wire rack to cool completely.
