GF Chocolate Brownies (With Coconut Sugar)

Ingredients:

-       1 cup coconut sugar

-       1/3 cup cocoa powder

-       1/2 cup gluten free 1:1 baking flour

-       1/4 tsp baking powder

-       1/2 teaspoon salt

-       2 eggs

-       1/2 cup coconut oil melted or oil of choice.

-       1 teaspoon vanilla

-       1/2 cup chocolate chips 

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a 9x9-inch square cake pan with parchment paper and set aside. 
  1. In a large bowl, whisk together the eggs, coconut sugar, and oil until smooth and creamy. Stir in the vanilla extract.
  1. Add the gluten-free baking flour, cocoa powder, baking powder, and salt to the egg mixture. Whisk until just combined, being careful not to overmix. 
  1. Fold the chocolate chips gently into the batter.
  1. Pour the batter into the prepared pan and smooth the top. Sprinkle a few extra chocolate chips over the surface.
  1. Bake for about 25 minutes, or until set. Avoid overbaking to keep the brownies fudgy rather than dry and cakey.
  2. Once baked, remove from the oven and allow to cool completely before slicing.
