GF Chocolate Brownies (With Coconut Sugar)

Ingredients:
- 1 cup coconut sugar
- 1/3 cup cocoa powder
- 1/2 cup gluten free 1:1 baking flour
- 1/4 tsp baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup coconut oil melted or oil of choice.
- 1 teaspoon vanilla
- 1/2 cup chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C). Line a 9x9-inch square cake pan with parchment paper and set aside.
- In a large bowl, whisk together the eggs, coconut sugar, and oil until smooth and creamy. Stir in the vanilla extract.
- Add the gluten-free baking flour, cocoa powder, baking powder, and salt to the egg mixture. Whisk until just combined, being careful not to overmix.
- Fold the chocolate chips gently into the batter.
- Pour the batter into the prepared pan and smooth the top. Sprinkle a few extra chocolate chips over the surface.
- Bake for about 25 minutes, or until set. Avoid overbaking to keep the brownies fudgy rather than dry and cakey.
- Once baked, remove from the oven and allow to cool completely before slicing.
