Easy Coconut Rice Recipes

Coconut Rice:
Ingredients:
- 1 ½ cups uncooked jasmine rice
- 1 (14 ounce) can light or full-fat coconut milk, well shaken and stirred
- 1 ¼ cups water
- 2 teaspoons sugar
- 1 ½ teaspoons kosher salt
- 1 teaspoon coconut oil
- ¼ cup of shredded coconut*
*It adds more of that coconut flavour however, if you don’t have any that's fine too.
Method:
- Using a fine mesh strainer, rinse the rice with cold water. Stir the rice with your fingers to remove excess starch until the water runs clear, which should take about 1 minute.
- In a medium saucepan, combine the rinsed rice, coconut milk, shredded coconut, water, sugar, and salt. Stir until the sugar dissolves, about 1 minute.
- Bring the mixture to a boil over medium heat. Cover, reduce the heat to low, and let it simmer undisturbed for 11 minutes. Turn off the heat and let it steam, still covered, for about 10 minutes until the rice is tender and the liquid is absorbed. Uncover and gently stir in the coconut oil.
- Garnish with your choice of ingredients and enjoy!
