Pear raisins and carrot muffins Recipe

Ingredients:
- 2 cups self-raising flour
- 1 large pear, grated
- 1 medium carrot, grated
- ¹/³ cup raisins
- ¼ cup brown sugar
- 2 eggs
- ¼ cup sunflower oil
- ²/³ cup skim milk
Instructions:
1. Preheat the oven to 170°C. Line a 12-hole muffin tin (⅓ cup capacity per hole) with paper cases.
2. In a large mixing bowl, combine the flour, grated pear, grated carrot, raisins, and sugar. Stir well to mix.
3. In a separate jug, whisk together the eggs, oil, and milk until smooth. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined. Be careful not to overmix.
4. Evenly divide the batter between the prepared muffin cases.
5. Bake for about 15 minutes, or until the muffins are golden and spring back when lightly pressed. Allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
