Easy Fruit Rock Cakes Recipe

Fruit Rock Cakes

Servings: 12 cakes
Ingredients:
- 25g self-raising flour
- 75g cane sugar
- 1 tsp baking soda
- 125g unsalted butter, cut into cubes
- 150g dried fruit (raisins, sultanas or currants)
- 1 free-range egg
- 1 tbsp milk
- 2 tsp vanilla extract
Instructions:
1. Preheat the oven to 180°C (160°C Fan) or Gas Mark 4. Line a baking tray with baking parchment.
2. In a large mixing bowl, combine the flour, sugar, and baking powder. Add the cubed butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Stir in the dried fruit.
3. In a separate bowl, whisk together the egg, milk, and vanilla extract.
4. Pour the egg mixture into the dry ingredients and stir gently with a spoon until it forms a thick, lumpy dough. If the dough feels too dry, add an extra teaspoon of milk to help it come together.
5. Drop spoonfuls of the dough onto the prepared baking tray, making sure to leave enough space between each one, as they will spread and flatten during baking.
6. Bake for 15–20 minutes, or until the tops are golden brown. Let the baked goods cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
