Easy Homemade Vegan Nut Roast

Method

  1. Preheat the oven to 180°C/gas mark 4.
  2. Cook the lentils in plenty of water for about 15 minutes, then drain them using a fine sieve.
  3. While the lentils are cooking, heat a little of the sun-dried tomato oil in a large frying pan and gently fry the onion for 5 minutes until soft.
  4. Add all the remaining ingredients except the seasoning, and stir well.
  5. Add the cooked lentils and mix again until everything is fully combined, then season to taste.
  6. Line a 20cm × 10cm loaf tin with non-stick baking paper and press the mixture firmly into the tin.
  7. Bake for 37–45 minutes, then let it cool for 10 minutes before removing from the tin and slicing into thick pieces.
