Ingredients:

Instructions:

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, and dried fruit. Stir until well combined.
  2. In a separate bowl, mix together the melted coconut oil, honey or maple syrup, vanilla extract, and salt (if using).
  3. Pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
  4. Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
  5. Transfer the mixture into the lined baking dish and press it down firmly and evenly using a spatula or the back of a spoon.
  6. Place the baking dish in the refrigerator for at least 2 hours, or until the bars are firm and set.
  7. Once the bars are firm, remove them from the refrigerator and lift them out of the baking dish using the parchment paper overhang.
  8. Use a sharp knife to cut the mixture into bars or squares.
  9. Store the bars in an airtight container in the refrigerator for up to one week.
  10. Feel free to customize these bars by adding in your favorite nuts, seeds, or spices! Enjoy your homemade healthy snack bars.
