Healthy Breakfast Bars Recipes

Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup desiccated coconut
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 cup chia seeds
- 1/4 cup flax seeds
- 1/2 cup dried fruit raisins
- 1/2 chopped dates
- 1/2 cup coconut oil, melted
- 1/3 cup honey or maple syrup *
- 1 teaspoon vanilla extract
- Pinch of salt
*Optional for added sweetness
Instructions:
- In a large mixing bowl, combine the rolled oats, shredded coconut, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, and dried fruit. Stir until well combined.
- In a separate bowl, mix together the melted coconut oil, honey or maple syrup, vanilla extract, and salt (if using).
- Pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
- Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
- Transfer the mixture into the lined baking dish and press it down firmly and evenly using a spatula or the back of a spoon.
- Place the baking dish in the refrigerator for at least 2 hours, or until the bars are firm and set.
- Once the bars are firm, remove them from the refrigerator and lift them out of the baking dish using the parchment paper overhang.
- Use a sharp knife to cut the mixture into bars or squares.
- Store the bars in an airtight container in the refrigerator for up to one week.
