How to Make Easy Cranberry Quinoa Banana Bread

Servings: 1 standard loaf

Ingredients:

  • 1 ½ cups blanched almond flour
  • ½ cup quinoa flour
  • 2 tablespoons flaxseed meal
  • 2 tablespoons arrowroot powder
  • 2 tablespoons coconut sugar
  • 2 teaspoons coconut flour
  • 1 teaspoon vanilla powder
  • 1 teaspoons cinnamon
  • 3/4 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 large eggs
  • ½ cup mashed banana
  • 1 tablespoon olive oil or oil of choice
  • 2 tablespoons honey or liquid sweetener of choice
  • 1 tablespoon apple cider vinegar
  • 2/3 cup fresh cranberries
  • 1 tablespoon turbinado sugar to garnish optional

Instructions:

Preheat the oven to 350°F:
  • While the oven heats, take a standard loaf pan and line it with parchment paper, allowing some excess paper to hang over the sides for easier removal later. Set the prepared pan aside.
Prepare the dry ingredients:
  • In a large mixing bowl, combine all the dry ingredients (such as flour, baking soda, baking powder, and any spices or salt your recipe calls for).
  • Whisk them together thoroughly to ensure everything is evenly distributed and well incorporated.
Add the wet ingredients:
  • To the dry ingredients, add the eggs, mashed banana, oil, honey, and vinegar. Use a hand mixer or stand mixer to beat the mixture until it's smooth and all the ingredients are fully combined.
Fold in the cranberries:
  • Gently fold the dried cranberries (or any mix-ins like nuts or chocolate chips) into the batter, ensuring they are evenly distributed without overmixing the batter. 
Transfer the batter to the loaf pan:
  • Carefully pour the batter into your prepared loaf tin, spreading it out evenly.
  • You can smooth the top with a spatula if necessary to ensure it bakes evenly. For an extra touch, sprinkle some sugar over the top of the batter before placing it in the oven.
Bake the loaf:
  • Place the loaf pan on the center rack of your preheated oven and bake for 40-45 minutes.
  • Keep an eye on the loaf as it bakes, and once the top has turned a beautiful golden-brown color, test for doneness by inserting a cake tester or toothpick into the center of the loaf. If it comes out clean, the loaf is fully baked. 
Cool the loaf:
  • After removing the loaf from the oven, allow it to cool in the pan for about 10 minutes.
