How to Make Easy Cranberry Quinoa Banana Bread

Ingredients:
- 1 ½ cups blanched almond flour
- ½ cup quinoa flour
- 2 tablespoons flaxseed meal
- 2 tablespoons arrowroot powder
- 2 tablespoons coconut sugar
- 2 teaspoons coconut flour
- 1 teaspoon vanilla powder
- 1 teaspoons cinnamon
- 3/4 teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- ½ cup mashed banana
- 1 tablespoon olive oil or oil of choice
- 2 tablespoons honey or liquid sweetener of choice
- 1 tablespoon apple cider vinegar
- 2/3 cup fresh cranberries
- 1 tablespoon turbinado sugar to garnish optional
Instructions:
Preheat the oven to 350°F:- While the oven heats, take a standard loaf pan and line it with parchment paper, allowing some excess paper to hang over the sides for easier removal later. Set the prepared pan aside.
- In a large mixing bowl, combine all the dry ingredients (such as flour, baking soda, baking powder, and any spices or salt your recipe calls for).
- Whisk them together thoroughly to ensure everything is evenly distributed and well incorporated.
- To the dry ingredients, add the eggs, mashed banana, oil, honey, and vinegar. Use a hand mixer or stand mixer to beat the mixture until it's smooth and all the ingredients are fully combined.
- Gently fold the dried cranberries (or any mix-ins like nuts or chocolate chips) into the batter, ensuring they are evenly distributed without overmixing the batter.
- Carefully pour the batter into your prepared loaf tin, spreading it out evenly.
- You can smooth the top with a spatula if necessary to ensure it bakes evenly. For an extra touch, sprinkle some sugar over the top of the batter before placing it in the oven.
- Place the loaf pan on the center rack of your preheated oven and bake for 40-45 minutes.
- Keep an eye on the loaf as it bakes, and once the top has turned a beautiful golden-brown color, test for doneness by inserting a cake tester or toothpick into the center of the loaf. If it comes out clean, the loaf is fully baked.
- After removing the loaf from the oven, allow it to cool in the pan for about 10 minutes.
