Paleo Bagels
Prep Time: 20 mins
Cook Time: 25 mins
Ingredients:
Dough
- 1 ½ cups cassava flour
- 1 ½ cups arrowroot flour
- 6 whole eggs
- 6 tablespoons palm oil shortening (equivalent to ⅜ cup, but 6 tablespoons is more common to use)
- 3 tablespoons maple syrup
- 1 ½ tablespoons water
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons sea salt
Topping:
- 3 tablespoon black sesame seeds or any type of seeds
- optional egg wash (1 egg mixed + 1-3 teaspoons dairy free milk or water)
Instructions:
- Preheat the oven to 175°C and line a baking sheet with parchment paper.
- In large mixing bowl, combine all the dough ingredients until the mixture is smooth and well combined.
- Divide the dough into four equal portions.
- Fill a large saucepan halfway with water (about 2 quarts) and bring it to a boil. Once boiling, reduce the heat slightly to maintain a steady simmer.
- Roll each portion of dough into a ball, then shape it into a bagel. If the dough sticks to your hands, wet your hands slightly to make shaping easier.
- Carefully drop one bagel at a time into the simmering water. Let each bagel cook for 1 minute per side, or until it floats to the surface.
- Remove the boiled bagels and place them on the prepared baking sheet. If desired, brush the tops with egg wash to give them a golden finish, and sprinkle sesame seeds over them for added flavor.
- Bake the bagels at 350°F for 25 minutes, or until they turn golden brown.
