Oatmeal Raisins Energy Bites

Servings: 24 medium balls
Ingredients:
- 3/4 cup raisins
- 1 1/4 cup rolled oats (divided)
- 1 teaspoon cinnamon
- 1/2 cup peanut butter or almond butter
- 1 teaspoon pure vanilla extract
- 1/4 cup honey
Instructions:
- In a food processor, blend the dry ingredients—raisins, 1 cup of oats, and cinnamon—until well combined.
- Add the remaining 1/4 cup of oats, nut butter, honey, and vanilla extract. Stir until the mixture is fully combined.
- -Cover and refrigerate the mixture for about an hour to firm up.
Once chilled, roll the mixture into small, bite-sized balls. This recipe makes approximately 24 balls.
Optional: Top with shaved dark chocolate for an extra touch of flavor.
