Oat and raisins cookies Recipe

Ingredients:
- ¾ cup raisins
- 2 cups rolled oats
- 1 cup wholemeal flour
- 2 tablespoons brown sugar
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ¼ cup macadamia olive or canola oil
- ½ cup apple purée
- 1 egg
Ingredients:
1.Preheat the oven to 180°C and line two large baking trays with baking paper. Place the raisins in a small bowl, cover with warm water, and let them soak to soften.
2.Meanwhile, in a medium bowl, mix together the rolled oats, flour, sugar, cinnamon, and baking soda. Stir to combine. In a separate bowl, whisk together the remaining wet ingredients.
3.Drain the softened raisins and chop them coarsely. Add them to the dry mixture, then pour in the wet ingredients and stir until fully combined.
4.With slightly damp hands, shape heaped tablespoonfuls of the dough into balls. Arrange them on the prepared trays, leaving space between each one, and gently flatten them.
5.Bake for 15–20 minutes, or until the cookies are golden. Allow them to cool completely on the trays before serving.
