Teff Banana & Raisin Bread Recipes

Ingredients:
- 1 cup teff flour
- 1/2 cup mashed ripe bananas (about 2 medium bananas)
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1/2 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup raisins
Method:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, melted coconut oil, almond milk, coconut sugar, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the teff flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Gently fold in the raisins until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, slice and serve your delicious teff banana bread with raisins. Enjoy!
