Teff Banana & Raisin Bread Recipes

Ingredients:

  • 1 cup teff flour
  • 1/2 cup mashed ripe bananas (about 2 medium bananas)
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins

Method:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, melted coconut oil, almond milk, coconut sugar, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the teff flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Gently fold in the raisins until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and spread it out evenly.
  7. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, slice and serve your delicious teff banana bread with raisins. Enjoy!
