Vegan banana & walnut bread

Ingredients:
- 50g coconut oil or sunflower oil, plus extra for the tin
- 200g self-raising flour
- 25g ground almonds
- 1 tsp baking powder
- 75g light coconut palm sugar
- 4 dates finely chopped
- 3-4 very ripe bananas smashed
- 3 tbsp soya milk
- 75g walnut pieces, toasted
Instructions:
Step 1: Prepare the Tin
1. Preheat your oven to 200°C (180°C fan) / gas mark 6.
2. Brush a 450g loaf tin with a little oil and line it with baking parchment.
Step 2: Make the Batter
1. In a large bowl, combine the flour, ground almonds, baking powder, sugar, and chopped dates.
2. In a separate bowl, mash the bananas and beat them with the oil.
3. Mix the banana and oil mixture into the dry ingredients.
4. Gradually add the soya milk to loosen the batter, then fold in the chopped walnuts.
5. Scrape the mixture into the prepared loaf tin.
Step 3: Bake the Loaf
1. Bake for 1 hour, covering the top with foil if it starts to brown too quickly
2. Test with a skewer in the center—if it comes out clean, the loaf is ready. If not, bake for an additional 10 minutes.
3. Allow to cool for 15 minutes before removing from the tin.
