Whole Wheat Flour Pudding ( Sheera/ Halwa)

Ingredients:

1 cup of atta or whole wheat flour

1/2 cup pure ghee
-
2 cups water
-
1/2 to ¾ of cane sugar

1/4 cup raisins
Instructions
1.Roast the flour
- Place the whole wheat flour in a heavy-bottomed pan. Roast over medium-low heat, stirring constantly.
- Set a timer for 20 minutes and continue to roast until the flour turns a rich golden-brown color—similar to burnished wood—and releases a nutty aroma.
2. Let it cool slightly
- Turn off the heat. The pan will retain residual heat, so this short pause helps prevent the flour from burning while you move to the next step.
3. Add the ghee
- Pour in the ghee and stir continuously until it is fully absorbed and the mixture becomes smooth and fragrant.

Then, turn the heat back on to medium-low.
4. Add water and cane sugar
- Add the water and cane sugar to the pan. Stir well to combine.
- Continue cooking, stirring frequently, until all the water has been absorbed and the mixture thickens.
- You’re looking for a consistency similar to thick oatmeal or porridge.
5. Add optional mix-ins

If you’re using raisins or almonds, stir them in at this stage and cook for another minute or two to blend the flavours
6. Serve
- Remove from heat and allow the halwa to cool slightly.
- Serve warm for the best flavor and texture.
