About Rye Flour 100% (Stoneground)
Rye Flour contains the endosperm (the germ and bran) making it richer in nutrients than wheat flour. It has a slightly nutty taste and higher protein content than most other grains but lower in gluten.So when baking it is good to add a little gluten to the mix for elasticity.You can also use it as a substitute for wheat flour if you are looking for less gluten option.
In comparison with most of the flours it has low calories and fat content since it is made from the endosperm portion of the grain.It is highly nutritious and provides dietary fibre, vitamin B and proteins.
