About Vital Wheat Gluten Flour
Vital wheat gluten flour is prepared from wheat grains undergoing a dehydrating process to remove other ingredients except the active gluten. Vital wheat gluten flour is a protein source found in wheat and is almost pure gluten.
It has a very low starch content and is the perfect ingredient to make your dough very elasticated. This flour is great if you want to increase the gluten content of your bread when baking but also can be used in muffins and other bakes as a substitute for yeast. You can also add vital wheat gluten flour in baking to increase the shelf life of the baked items .
It contains all the essential amino acids including lysine and methionine
