Easy Homemade Tapioca Pearls

Ingredients:
Brown Sugar Pearls:
- 
50 g dark brown sugar ¼ cup ( can substitute for cane sugar) 
- 
60 g water ¼ cup 
- 
100 g tapioca flour 
Matcha Boba Pearls:
- 
50 g white sugar ¼ cup 
- 
60 g water ¼ cup 
- 
5 g culinary grade matcha powder or butterfly pea powder 
- 
100 g tapioca flour sifted, for the matcha version 
Method:
Making the sugar syrup
- 
Heat sugar + water in a small saucepan until it boils.(add food colouring now) 
- 
Mix starch base 
- 
If making flavoured boba, mix tapioca flour with matcha 
Form starter dough
- 
Remove boiling syrup from heat. 
- 
Quickly whisk in 3–4 tbsp tapioca flour (or starch mix). 
- 
Return to the stove on low heat, whisk until it becomes thick and gelatinous (2–3 min). 
Make full dough
- 
Add the rest of the tapioca flour. 
- 
Turn out onto a clean surface, knead while hot until smooth, soft, and slightly tacky. 
Shape pearls
- 
Roll dough to ¼ inch thick. Cut into 1 cm squares. 
- 
Roll each piece into a ball, coat lightly with tapioca starch. (If the dough cracks, moisten with a little water.)
