Easy Brazilian Cheese Bread

Servings: 6 - 8 servings ( 12- 18 minis)
Ingredients:
- 1 large egg, room temperature
- 1/3 cup extra virgin olive oil, plus more for greasing the pan
- 2/3 cup milk
- 1 1/2 cups (170 g) tapioca flour
- 1/2 cup (66 g) packed grated or crumbled cheese, your preference
- 1 teaspoon salt (or more to taste)
Method:
- Preheat the oven to 200 celsius and for the mini muffin tin spread a small amount of olive oil around the insides of each well.
- Put all ingredients into a blender and pulse until smooth
- Pour batter into prepared muffin tin half way into each well
- Bake for about 20 mins at 200 degrees or until nice and golden brown
- Remove from oven and let rest on a drying rack
- Eat best when warm or at room temperature.
*Leftovers can be kept refrigerated for a week
