Easy Brazilian Cheese Bread

Total Time: 20 mins 
Servings: 6 - 8 servings ( 12- 18 minis) 

Ingredients: 

  • 1 large egg, room temperature
  • 1/3 cup extra virgin olive oil, plus more for greasing the pan
  • 2/3 cup milk
  • 1 1/2 cups (170 g) tapioca flour
  • 1/2 cup (66 g) packed grated or crumbled cheese, your preference
  • 1 teaspoon salt (or more to taste)

Method: 

  1. Preheat the oven to 200 celsius and for the mini muffin tin spread a small amount of olive oil around the insides of each well.
  2. Put all ingredients into a blender and pulse until smooth
  3. Pour batter into prepared muffin tin half way into each well 
  4. Bake for about 20 mins at 200 degrees or until nice and golden brown
  5. Remove from oven and let rest on a drying rack
  6. Eat best when warm or at room temperature.

*Leftovers can be kept refrigerated for a week
