Effortlessly Easy Buckwheat Pancakes

Ingredients:
- 300g Buckwheat Flour
- 2 eggs or egg replacer eg. Aquafaba
- 30g Sunflower Oil
- 200ml dairy free milk
- 1 tsp baking soda
Directions:
- Mix flour, eggs or egg replacer, milk, baking soda, pinch of salt in a large bowl and Mix until the batter becomes smooth.
- Add oil and mix everything together
- Fry in a hot pan. Make sure to fry on both sides around 2-3 minutes or until golden brown.
- Stack pancakes on a plate covering with a towel to keep warm.
- Serve with toppings of your choice. Such as almonds, nuts, seeds, maple syrup, almond butter or peanut butter.
