Tomato Basil Penne Delight

Serves: 5
Ingredients:
- 2 cups of penne pasta
- 1 can of diced tomatoes (canned or fresh)
- A handful of basil leaves
- 4 cloves of garlic
- 1/4 cup of olive oil
- Sea Salt
- Red pepper flakes
- Mix of vegetables ( bell peppers, carrots, broccoli etc.)
- Oregano
- Crushed pepper
- 1 cup of Pasta sauce
- Grated Parmesan cheese
Step 1:
Put 4 cups of water and pasta in a pan. Boil the pasta for 5 minutes until it's al dente. Then strain but don’t forget to save some pasta water for the sauce. While the pasta is boiling, prep by finely chopping tomatoes, basil and veggies.
Step 2:
Put a medium pan on the heat and pour some olive oil. Once heated add garlic, red pepper flakes and tomato purée. Let that simmer for 1-2 minutes.
Step 3:
Now add veggies to the pan. Stir well then cover and cook for 8-10 mins, stirring a few times.
Step 4:
Add chopped tomatoes to the pan. Add salt and pepper to your liking. As well as adding a little bit of pasta sauce to thicken the sauce. Occasionally stir the sauce letting it simmer for 5-6 minutes.
Step 5:
After the sauce has boiled, add your pasta. Make sure to mix well to incorporate everything. Sprinkle in a bit of oregano. And let everything simmer on a low heat for another 2-3 minutes.
While cooking, start grating parmesan cheese to sprinkle on top later.
Step 6:
Serve whenever everyone is ready. However, it's best when warm. Sprinkle previously grated cheese go crazy because no amount of cheese is too much cheese… and don’t forget to top off with some basil.
