Wholesome Quinoa and Chickpea Salad Recipe

Ingredients:
* 1 cup quinoa
* 1 cup of chickpeas
* 1 cup cherry tomatoes halved
* 1 cucumber, diced
* 1/2 red onion, finely chopped
* 1/4 cup fresh parsley, chopped
* 1/4 cup fresh mint leaves, chopped
* 1/4 cup extra-virgin olive oil
* 1/2 cup toasted almonds, chopped
* 1/4 cup pumpkin seeds
* 2 tablespoons lemon juice
* 2 cloves garlic
* Salt and pepper
Steps: -
Step 1: Steam the Quinoa
Add quinoa and 2 cups of water to a medium saucepan and cook it for 15 minutes on low heat. Turn off the heat once the water is absorbed and let the quinoa cool down.
(You can always make extra for next time as quinoa can be kept in the fridge for 2 -3 days.)
Step 2: Prepare the tangy dressing
Whisk extra-virgin olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl together. It will add a tangy taste to your salad and instantly bring life to it.
Step 3: Give it a good mix
Take a large bowl and mix cooked quinoa, chickpeas, cherry tomatoes, cucumber, and red onion in it.
(You may add other plant-based products as per your liking)
Step 4: Add vibrant zest and textures
Put in some freshness with chopped parsley and mint leaves. Add crunch and texture with toasted almonds and pumpkin seeds.
Step 5: Adorn the salad
Pour the dressing on all ingredients and mix well to evenly coat them with the zesty glaze.
And there you go! Read to serve.
Step 6: Mix and Refrigerate
Whip up a medley of perfection and let it chill to your liking.
