Gluten Free Flatbread (cassava flour)

Servings: 6 - 8 Flatbreads 


Ingredients: 

  • 2 cups cassava flour (280 g)

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder 

  • 1/2 teaspoon oregano 

  • 1/2 cup + 2 tablespoons dairy free coconut yoghurt (150 ml)

  • 1 cup dairy free milk (240 ml)

  • 2 tablespoons olive oil (30 ml)


Method: 

Mix dough

  1. In a bowl, whisk cassava flour, baking powder, salt (plus garlic powder + oregano if using).

  2. Stir in yogurt, milk, and olive oil until a soft dough forms.

  3. Rest for 10 min.

 

Shaping dough

  1. Lightly flour a sheet of baking paper.

  2. Divide dough into 8 pieces.

  3. Roll each into an 8-inch circle, adding flour as needed.


Cook

  1. Heat a non-stick pan over medium-high.

  2. Cook each flatbread 4–5 min per side, until golden with small air pockets.

  3. Brush with a little oil, flip, and repeat.
