Gluten Free Flatbread (cassava flour)

Servings: 6 - 8 Flatbreads
Ingredients:
- 
2 cups cassava flour (280 g) 
- 
1 teaspoon baking powder 
- 
1/2 teaspoon salt 
- 
1/2 teaspoon garlic powder 
- 
1/2 teaspoon oregano 
- 
1/2 cup + 2 tablespoons dairy free coconut yoghurt (150 ml) 
- 
1 cup dairy free milk (240 ml) 
- 
2 tablespoons olive oil (30 ml) 
Method:
Mix dough
- 
In a bowl, whisk cassava flour, baking powder, salt (plus garlic powder + oregano if using). 
- 
Stir in yogurt, milk, and olive oil until a soft dough forms. 
- 
Rest for 10 min. 
Shaping dough
- 
Lightly flour a sheet of baking paper. 
- 
Divide dough into 8 pieces. 
- 
Roll each into an 8-inch circle, adding flour as needed. 
Cook
- 
Heat a non-stick pan over medium-high. 
- 
Cook each flatbread 4–5 min per side, until golden with small air pockets. 
- 
Brush with a little oil, flip, and repeat.
