Healthy Date & Walnut Cake

Ingredients:
- 137.5g soft dates
- 200ml milk of choice
- 2.5 tbsp tahini
- 2.5 tbsp neutral oil
- 93.7g oat flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- pinch of salt
- 25g walnuts roughly chopped
Date Tahini Drizzle
- 1 tbsp tahini
- 1 tsp date syrup
Instructions:
- Preheat your oven to 180°C (160°C fan) / 350°F.
- Pour the milk into a saucepan and warm it until it begins to bubble—remove from the heat just before it reaches a boil.
- Place the dates in a heatproof bowl and pour the hot milk over them. Let them soak for 30 minutes.
- Transfer the date and milk mixture to a blender or food processor and blend until smooth.
- Pour the blended mixture into a bowl, then add the tahini and oil. Stir until well combined.
- Add the oat flour, baking powder, cinnamon, and salt, mixing until you achieve a smooth batter.
- Pour the batter into an 8x8-inch square cake tin lined with parchment paper, and sprinkle the chopped walnuts on top.
- Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean.
- Let the cake cool completely before slicing. Mix the drizzle ingredients in a small bowl and pour over the cake before serving.
