Healthy Date & Walnut Cake

Ingredients: 

Date Tahini Drizzle

  • 1 tbsp tahini
  • 1 tsp date syrup

 

Instructions: 

  1. Preheat your oven to 180°C (160°C fan) / 350°F.
  2. Pour the milk into a saucepan and warm it until it begins to bubble—remove from the heat just before it reaches a boil.
  3. Place the dates in a heatproof bowl and pour the hot milk over them. Let them soak for 30 minutes.
  4. Transfer the date and milk mixture to a blender or food processor and blend until smooth.
  5. Pour the blended mixture into a bowl, then add the tahini and oil. Stir until well combined.
  6. Add the oat flour, baking powder, cinnamon, and salt, mixing until you achieve a smooth batter.
  7. Pour the batter into an 8x8-inch square cake tin lined with parchment paper, and sprinkle the chopped walnuts on top.
  8. Bake for 40–45 minutes, or until a skewer inserted into the center comes out clean.
  9. Let the cake cool completely before slicing. Mix the drizzle ingredients in a small bowl and pour over the cake before serving.
