Making coconut flour muffins is a great way to enjoy a gluten-free, healthy treat. These muffins are light, fluffy, and perfect for breakfast, a snack, or even dessert. Follow this easy step-by-step guide, and you’ll have delicious muffins in no time! 

Ingredients:

  • 1/2 cup coconut flour
  • 4 large eggs
  • 1/4 cup melted coconut oil (or butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup milk (dairy or nondairy like almond or coconut milk)
  • Optional: add-ins like chocolate chips, blueberries, or nuts

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C) so it’s ready when your batter is mixed.
  2. Prepare a muffin tin by either lining it with paper liners or lightly greasing each muffin cup with oil or cooking spray.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the coconut flour, baking powder, and salt.
  2. Make sure there are no lumps in the flour. Coconut flour tends to clump, so use a whisk to break them up.

Step 3: Mix the Wet Ingredients

  1. In a separate large bowl, whisk the eggs until they’re well combined.
  2. Add the melted coconut oil, honey (or maple syrup), vanilla extract, and milk.
  3. Whisk everything together until smooth.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients (coconut flour mixture) into the bowl with the wet ingredients.
  2. Stir everything together until the batter is smooth. You’ll notice that coconut flour absorbs liquid quickly, so the batter will thicken as you mix. 

Step 5: Add Any Optional Mix-ins

  1. If you’re adding mix-ins like chocolate chips, blueberries, or chopped nuts, gently fold them into the batter at this stage.
  2. Make sure the add-ins are evenly distributed throughout the batter.

Step 6: Fill the Muffin Tin

  1. Spoon the batter evenly into the prepared muffin cups. Fill each cup about 3/4 full since the muffins will rise a bit while baking.
  2. If you like, you can sprinkle a few extra mix-ins (like chocolate chips or berries) on top for decoration. 

Step 7: Bake the Muffins

  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes. Check for doneness by inserting a toothpick into the center of a muffin—if it comes out clean, they’re ready.
  2. The muffins should be slightly golden on top.

Step 8: Cool and Serve

  1. Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes.
  2. Then, transfer them to a wire rack to cool completely before serving.
  3. Enjoy your coconut flour muffins plain, or spread with a little butter or jam! 

Tips:

  • Store your muffins in an airtight container at room temperature for 2-3 days, or in the fridge for up to a week.
  • Freeze leftovers for up to 3 months. Just thaw them at room temperature or warm them up in the microwave.
  • Coconut flour absorbs a lot of moisture, so don’t be alarmed if your batter looks thicker than traditional muffin batters.
