How to Make Vegan Brownies Recipes

Vegan Brownies

Serves : about 12 squares
Ingredients:
- 3 tbsp ground flaxseed
- 200g/7oz vegan dark chocolate, chopped
- 175g/6oz dairy-free margarine
- 125g/4½oz caster sugar
- 125g/4½oz light muscovado sugar
- 2 tbsp maple syrup or barley malt extract
- 1 tsp vanilla extract
- 150g/5½oz plain flour
- ½ tsp baking powder
- pinch salt
- 2 tbsp soya milk
- 100g/3½oz vegan chocolate chips (optional)
Method:
- Preheat the oven to 170°C/150°C Fan/Gas 3. Grease a 20 x 30cm (8 x 12in) baking tin and line the base and sides with baking parchment.
- In a small bowl, whisk together the ground flaxseed and 9 tablespoons of cold water. Let the mixture sit for 10 minutes to thicken.
- Melt the chocolate in a heatproof bowl placed over a pan of gently simmering water, ensuring the bowl does not touch the water. Once nearly melted, add the dairy-free margarine and stir until combined. Remove from the heat and let the residual heat melt the margarine completely.
- Stir the sugar (both types), maple syrup, and vanilla extract into the melted chocolate mixture until smooth.
- Sift the flour, baking powder, and salt into the chocolate mixture. Add the soaked flaxseed mixture and milk, then stir until the batter is smooth and fully combined.
- Pour the batter into the prepared baking tin, spreading it evenly with the back of a spoon. If desired, sprinkle chocolate chips over the top.
- Bake on the middle shelf of the oven for 30 minutes, or until the edges are lightly risen and the center is just set (it’s fine if the middle remains slightly soft for a fudgy texture).
- Let the brownies cool completely in the tin. Once cooled, transfer to a board and cut into squares. Serve and enjoy!
