Matar Paratha - (Paratha Stuffed with Peas)

Ingredients

Dough:

  • 1 cup whole wheat chapati flour
  • ¼ teaspoon salt
  • water as required to knead
  • ½ teaspoon oil

Stuffing:

  • 1 cup peas boiled and coarsely mashed
  • 2 garlic cloves finely chopped
  • ½ teaspoon cumin seeds
  • ⅛ teaspoon red chili powder or to taste
  • salt to taste
  • 1 teaspoon oil
  • ghee to roast the parathas

Instructions

Dough Prep:

  1. Take the whole wheat flour in a bowl.
  2. Add water little by little and knead to a soft dough.
  3. Smear 1/2 teaspoon of oil on top.
  4. Cover the dough and let it rest for 15-20 minutes.

 

Stuffing Prep:

  1. Remove the peas from their pods and place them in a pan of hot water.
  2. Simmer on medium heat until the peas are soft, then drain and set aside.
  3. Mash the peas with a pestle or blend them.
  4. Heat 1 teaspoon of oil in a pan, add cumin seeds and let them crackle.
  5. Add chopped garlic and sauté until fragrant. Add the mashed peas, salt, and red chili powder, and mix well.
  6. Cook for 2-3 minutes on medium heat until the spices are well incorporated.
  7. Remove from heat, transfer to a bowl, and set aside.

Making Paratha:

  1. Roll a lemon-sized piece of dough into a 1/8-inch thick circle.
  2. Spread 1/4 teaspoon of ghee or oil over the dough.
  3. Place 1.5 tablespoons of filling in the center.
  4. Gather and pinch the edges to seal, then flatten with your fingers.
  5. Roll the dough again into a 1/8-inch thick circle.
  6. Cook the paratha on a heated tawa or griddle until light brown spots appear.
  7. Flip, apply ghee or oil, and cook until brown patches form on both sides.
  8. Serve hot with yogurt and pickle.
