Matar Paratha - (Paratha Stuffed with Peas)

Ingredients
Dough:
- 1 cup whole wheat chapati flour
- ¼ teaspoon salt
- water as required to knead
- ½ teaspoon oil
Stuffing:
- 1 cup peas boiled and coarsely mashed
- 2 garlic cloves finely chopped
- ½ teaspoon cumin seeds
- ⅛ teaspoon red chili powder or to taste
- salt to taste
- 1 teaspoon oil
- ghee to roast the parathas
Instructions
Dough Prep:
- Take the whole wheat flour in a bowl.
- Add water little by little and knead to a soft dough.
- Smear 1/2 teaspoon of oil on top.
- Cover the dough and let it rest for 15-20 minutes.
Stuffing Prep:
- Remove the peas from their pods and place them in a pan of hot water.
- Simmer on medium heat until the peas are soft, then drain and set aside.
- Mash the peas with a pestle or blend them.
- Heat 1 teaspoon of oil in a pan, add cumin seeds and let them crackle.
- Add chopped garlic and sauté until fragrant. Add the mashed peas, salt, and red chili powder, and mix well.
- Cook for 2-3 minutes on medium heat until the spices are well incorporated.
- Remove from heat, transfer to a bowl, and set aside.
Making Paratha:
- Roll a lemon-sized piece of dough into a 1/8-inch thick circle.
- Spread 1/4 teaspoon of ghee or oil over the dough.
- Place 1.5 tablespoons of filling in the center.
- Gather and pinch the edges to seal, then flatten with your fingers.
- Roll the dough again into a 1/8-inch thick circle.
- Cook the paratha on a heated tawa or griddle until light brown spots appear.
- Flip, apply ghee or oil, and cook until brown patches form on both sides.
- Serve hot with yogurt and pickle.
