Organic White Mulberry Muffins

Ingredients:
- ½ cup coconut flour
- ¾ cup tapioca starch
- 1 ½ tsp ground cinnamon
- 1 ½ tsp baking soda
- 1 ¾ cups unsweetened or cinnamon applesauce
- 3 eggs, beaten
- 1 ½ tsp lemon juice
- 1 ½ tsp vanilla extract
- Pinch of salt
- 1 cup dried white mulberries
Instructions:
- Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin with 12 muffin papers.
- In a medium-sized bowl, combine the coconut flour, tapioca flour, ground cinnamon, and baking soda. Whisk together until well mixed.
- In a separate bowl, beat the eggs, then add the applesauce, lemon juice, vanilla extract, and salt. Mix until well combined.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Gently fold in the mulberries.
- Divide the muffin batter evenly among the 12 muffin papers. Place the muffin tin in the oven and bake for 15-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy once cooled.
