Chocolate Rye Cookies

Ingredients:
- 200g dark chocolate, finely chopped
- 100g unsalted butter, diced
- 100g caster sugar
- 150g light brown sugar
- 2 eggs
- 130g wholemeal rye flour
- 50g cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 100g icing sugar
Instructions:
- Prep: Preheat the oven to 180°C (fan 160°C/gas 4).Line two baking trays with baking paper or silicone mats. Melt the chocolate and butter in a heatproof bowl over simmering water, stirring occasionally. Remove from heat.
- Mix: In a large bowl, whisk the sugars and eggs with an electric mixer until pale and tripled in volume. Mix in the melted chocolate. Add the dry ingredients (except icing sugar) and combine. Cover with cling film and chill for 3-4 hours until firm.
- Bake: Roll the dough into small balls, coat in icing sugar, and place on the trays with space between them. Bake for 12-13 minutes until puffed and cracked but slightly underbaked for a fudgy texture. Cool on trays for 5 minutes, then transfer to a wire rack. Store in a sealed container for up to a week.
