Paleo Date & Almond Protein Bites

Servings: 12 - 124 medium sized balls
Ingredients:
- 2½ tbsp toasted almonds, finely chopped
- 1½ tbsp unsweetened shredded coconut, toasted
- 1⅓ cups Medjool dates, pitted and diced
- ½ cup almond flour
- 4 tbsp coconut flour
- 1½ tbsp ground flaxseed
- ⅓ cup almond butter (100% almonds, no additives)
- Optional (if needed for texture only):
- 1–2 tsp warm water or extra almond butter
Method
Prepare the coating
In a shallow bowl, mix together the toasted chopped almonds and toasted shredded coconut. Set aside.
Blend the dry base
Add the dates, almond flour, coconut flour, and ground flaxseed to a food processor. Pulse several times until the mixture is finely chopped and evenly combined.
Add the binder
Spoon in the almond butter and process again until the mixture becomes sticky and starts to clump together.
If the mixture feels too dry, add 1–2 teaspoons of warm water or extra almond butter, processing briefly after each addition.
Shape the bites
Scoop out even portions of the mixture and roll into 12–14 bite-sized balls using your hands.
Coat
Roll each ball in the almond and coconut mixture until evenly coated.
Chill
Place the balls on a lined tray or plate and refrigerate for 30 minutes to firm up.
Store
Transfer to an airtight container and store in the fridge for up to 7 days, or freeze for longer storage.
