Homemade Almond Butter

Ingredients:
- 300g raw almonds
- 1–2 Medjool dates, softened (optional, for natural sweetness)
Optional Flavour Variations
- Cinnamon Almond Butter:
Add ½–1 tsp ground cinnamon - Sea Salt Almond Butter:
Add ¼ tsp fine sea salt - Cinnamon & Sea Salt:
Add ½ tsp cinnamon + ¼ tsp fine sea salt
Method
Step 1
Preheat the oven to 190°C (170°C fan / gas mark 5). Spread the almonds in a single layer on a baking tray and roast for 10 minutes, until lightly golden. Remove and allow to cool completely.
Step 2
Transfer the cooled almonds to a food processor and blend for 10–12 minutes, stopping occasionally to scrape down the sides. The mixture will move from crumbly to thick and finally smooth as the natural oils release.
Step 3 (Optional flavouring)
Add the Medjool dates (if using), cinnamon, and/or sea salt. Process again until fully combined and silky smooth.
Storage
Store in an airtight jar in the refrigerator for up to 3 weeks. Stir before use if natural oil separation occurs.
