Pumpkin seeds are one of nature's most nutrient-dense snacks — rich in magnesium, zinc, iron, and plant-based protein. Combined with coconut flour for natural body and fibre, these bites are serious wholefood fuel that actually satisfies.

Making these with coconut flour rather than almond flour also makes them completely nut-free — a great option for school-friendly snacks or anyone with tree nut allergies. Sweetened with raw honey or pure maple syrup — not a grain of refined sugar anywhere.

A highly absorbent, grain-free flour made from dried coconut flesh. It gives these bites structure and a subtle natural sweetness. Because it absorbs so much moisture, only a small amount is needed — use exactly as listed and do not substitute 1:1 with any other flour.

Pumpkin seeds
RICH IN MAGNESIUM

One of the best plant-based sources of magnesium, zinc, and iron. Use raw organic pumpkin seeds for maximum nutrition, or lightly toast them in a dry pan for 3–4 minutes for a deeper, nuttier flavour throughout the bites.

Choose your sweetener
Raw honey

Gives a warm, floral sweetness and helps bind the bites firmly. Rich in antioxidants and completely unrefined. Not vegan but a great wholefood option for those who include honey in their diet.

Pure maple syrup

A fully vegan option with a gentle caramel depth that pairs beautifully with the pumpkin seeds and coconut. Always use pure maple syrup rather than maple-flavoured syrup for best results.

Before you start: Coconut flour is very absorbent — the dough will thicken quickly once mixed. If it feels too dry and crumbly to roll, add water one teaspoon at a time until the dough just comes together. If it feels too soft, refrigerate for 10–15 minutes before rolling. The consistency you're looking for is firm enough to hold a ball shape without cracking.
How to make them
  • Set aside a small handful of pumpkin seeds for rolling the finished bites. Roughly chop the remaining pumpkin seeds so you get texture throughout without whole seeds in every bite.
  • In a large bowl, combine the coconut flour, cacao powder, and sea salt. Stir to mix evenly.
  • Add the sunflower seed butter, melted coconut oil, honey or maple syrup, and vanilla extract. Mix well until a thick dough forms. Fold in the chopped pumpkin seeds and chia seeds.
  • Check the consistency — if the dough is too dry to hold together, add water one teaspoon at a time. If too soft, refrigerate for 10–15 minutes.
  • Roll the dough into small balls, roughly 1 inch in diameter. Roll each ball in the reserved whole pumpkin seeds, pressing gently so they stick to the surface.
  • Place on a lined tray or plate and refrigerate for at least 30 minutes to firm up before serving.
