Recipe for Paleo Cassava Flour pancakes

Ingredients:
- 1 cup cassava flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup almond milk or coconut milk
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- Coconut oil or ghee for cooking
Instructions:
- Put cassava flour, baking powder and salt in a large bowl. Whisk together well.
- In a separate bowl, beat the eggs and add almond milk. Add maple syrup (or honey), and vanilla extract. Mix well.
- Add the wet ingredients to the dry and stir until combined. Don't overmix; lumps are fine.
- Warm a skillet or griddle on medium heat and drizzle in just enough coconut oil or ghee.
- Put about 1/4 cup of batter on the hot surface spoon by spoon. When bubbles appear on the surface, flip and cook both sides until golden brown.
- Do with the rest of the batter, adding more oil or ghee to the pan as needed.
- Serve warm with fresh berries or sliced bananas, and pure maple syrup.
