Recipe for Paleo Cassava Flour pancakes

Ingredients:

  • 1 cup cassava flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup almond milk or coconut milk
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Coconut oil or ghee for cooking

Instructions:

  • Put cassava flour, baking powder and salt in a large bowl. Whisk together well.
  • In a separate bowl, beat the eggs and add almond milk. Add maple syrup (or honey), and vanilla extract. Mix well.
  • Add the wet ingredients to the dry and stir until combined. Don't overmix; lumps are fine.
  • Warm a skillet or griddle on medium heat and drizzle in just enough coconut oil or ghee.
  • Put about 1/4 cup of batter on the hot surface spoon by spoon. When bubbles appear on the surface, flip and cook both sides until golden brown.
  • Do with the rest of the batter, adding more oil or ghee to the pan as needed.
  • Serve warm with fresh berries or sliced bananas, and pure maple syrup.
