Recipe for Tahini Cookies:
Ingredients:
- 1 cup tahini
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips (optional)
- Sesame seeds for garnish
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix tahini, brown sugar and softened butter in a large bowl. Combine well and beat until creamy.
- Beat in the eggs one at a time. Stir in the vanilla extract.
- Whisk together in a separate bowl the flour, baking powder, soda and salt.
- Add the dry ingredients to the wet gradually, mixing until well combined. Add chocolate chips, if desired.
- With tablespoon scoops, roll dough into balls. Put them on the prepared baking sheet, leaving some space between each one.
- With the back of a fork, flatten each cookie slightly and sprinkle with sesame seeds to garnish.
- Cook in the preheated oven for 10-12 minutes until the edges are golden brown.
- Let the cookies rest on the baking sheet for a couple of minutes, then transfer to a wire rack.
- Serve with coffee or tea.
