Recipe for Tahini Cookies:

Ingredients:

  • 1 cup tahini
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (optional)
  • Sesame seeds for garnish

Instructions:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix tahini, brown sugar and softened butter in a large bowl. Combine well and beat until creamy.
  • Beat in the eggs one at a time. Stir in the vanilla extract.
  • Whisk together in a separate bowl the flour, baking powder, soda and salt.
  • Add the dry ingredients to the wet gradually, mixing until well combined. Add chocolate chips, if desired.
  • With tablespoon scoops, roll dough into balls. Put them on the prepared baking sheet, leaving some space between each one.
  • With the back of a fork, flatten each cookie slightly and sprinkle with sesame seeds to garnish.
  • Cook in the preheated oven for 10-12 minutes until the edges are golden brown.
  • Let the cookies rest on the baking sheet for a couple of minutes, then transfer to a wire rack.
  • Serve with coffee or tea.
