Chickpea Flour Omelette Sandwich Recipe

Servings: 2 sandwiches

Ingredients:

For Omelette

  • 1 cup chickpea flour
  • 1 1/4 cups water
  • 1 tablespoon nutritional yeast (optional, for a cheesy flavour)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Oil to spray
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 2 tablespoons chopped green onions

For the Sandwich

  • 4 slices of whole-grain bread
  • Hummus or your favourite spread
  • Fresh spinach leaves
  • Sliced avocado
  • Hot sauce or sriracha (optional)

Instructions:

For chickpea flour omelette

  • Whisk chickpea flour, water, nutritional yeast, turmeric, baking powder, salt, and pepper
  • Stir in chopped cilantro, bell peppers, tomatoes, onions, and green onions.
  • Heat a non-stick skillet over medium heat and lightly grease it with oil.
  • Spread a ladleful of chickpea flour batter into thin layers onto the skillet
  • Cook each side for 3-4 mins or until golden brown on both sides. 

For Sandwich

  • Toast whole grain bread and spread with hummus.
  • Place omelette rounds on two slices of bread.
  • Top with fresh spinach leaves, sliced avocado, and hot sauce (optional).
  • Close the sandwich with the remaining slices of bread.
