Chickpea Flour Omelette Sandwich Recipe

Ingredients:
For Omelette
- 1 cup chickpea flour
- 1 1/4 cups water
- 1 tablespoon nutritional yeast (optional, for a cheesy flavour)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil to spray
- 2 tablespoons chopped fresh cilantro (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 2 tablespoons chopped green onions
For the Sandwich
- 4 slices of whole-grain bread
- Hummus or your favourite spread
- Fresh spinach leaves
- Sliced avocado
- Hot sauce or sriracha (optional)
Instructions:
For chickpea flour omelette
- Whisk chickpea flour, water, nutritional yeast, turmeric, baking powder, salt, and pepper
- Stir in chopped cilantro, bell peppers, tomatoes, onions, and green onions.
- Heat a non-stick skillet over medium heat and lightly grease it with oil.
- Spread a ladleful of chickpea flour batter into thin layers onto the skillet
- Cook each side for 3-4 mins or until golden brown on both sides.
For Sandwich
- Toast whole grain bread and spread with hummus.
- Place omelette rounds on two slices of bread.
- Top with fresh spinach leaves, sliced avocado, and hot sauce (optional).
- Close the sandwich with the remaining slices of bread.
