Vegan Baked Oatmeal with Raspberry & Coconut

Cook : 35 mins

Serves : 3-4

Ingredients:

-       ½ tsp coconut oil

-       melted

-       120g porridge oats

-       2 tbsp desiccated coconut

-       1 tsp ground cinnamon

-       40g walnuts

-       roughly chopped

-       200g raspberries

-       300ml plant-based milk

-       1 tbsp agave syrup

Method: 

  1. Preheat the oven to 180°C (160°C fan/gas mark 4). Lightly brush the bottom and sides of a small baking dish (around 20 x 15cm) with melted coconut oil.
  2. In a bowl, combine the oats, coconut, cinnamon, walnuts, most of the raspberries, and a pinch of salt. Add the plant-based milk and agave, stirring until well combined. Pour the mixture into the prepared baking dish.
  3. Top with the remaining raspberries. Bake for 20-25 minutes, or until the oatmeal is golden brown. Serve warm.
