Cassava Flour Blueberry Lemon muffins

Ingredients:
- ½ cup butter, room temperature
- ¼ cup granulated sugar, see note
- 1 ⅓ cups Cassava Flour
- 2 tsp baking soda
- 2 eggs
- 1 cup dairy free milk
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ½ cup blueberries
Instructions:
- Preheat the oven to 175°C and line a muffin tray with paper liners.
- In a stand mixer or a large mixing bowl, cream the butter and sugar together for 1 minute until light and fluffy.
- Add the remaining ingredients, except for the blueberries, and mix until the batter is smooth and well combined. Gently fold in the blueberries. The batter will have a thick consistency.
- Evenly distribute the batter among the prepared muffin liners, filling each almost to the top.
- Bake in the preheated oven for 19 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and allow them to cool slightly before serving.
