Cassava Flour Pasta Dough

Ingredients: 

-       1 cup cassava flour

-       1 teaspoon Sea Salt

-       2 large Egg(s)

-       2 tablespoons avocado oil

-       2+ tablespoons Chicken Bone Broth or water

Instructions

  1. In a bowl, combine the flour and salt, mixing thoroughly.
  1. Add the eggs, oil, and broth to the dry ingredients, then mix and knead until a smooth dough forms. Using a stand mixer fitted with a dough hook is recommended for ease.
  1. Wrap the dough in plastic wrap and let it rest at room temperature for 5 minutes. Alternatively, you can refrigerate the dough for up to 24 hours before rolling it out.
  1. Roll the dough into your desired shape for pasta, noodles, ravioli, manicotti, or lasagna, just as you would with any fresh pasta dough. 
  1. Cook the fresh pasta in salted boiling water for approximately 5 minutes, or until tender. Drain and serve immediately with your favorite sauce or add it to soups.
