Vegan Spelt Raisin Cookies

Ingredients:
- 300 g spelt flakes
- 125 g wholemeal spelt flour
- 125 g sultanas
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 125 ml melted coconut oil
- 200 g light brown sugar
- 2 chia eggs – 2 Tbsp ground chia seeds + 6 Tbsp of water
Instructions:
- Preheat the oven to 180°C (350°F/Gas 4).
- In a bowl, mix 2 Tbsp ground chia seeds with 6 Tbsp water and let sit for 10 mins. Soak sultanas in boiling water for 10 mins.
- Cream the chia mixture with sugar. Add cinnamon, vanilla, baking soda, baking powder, salt, and coconut oil. Mix well.
- Stir in spelt flakes and spelt flour. Add drained sultanas and blend thoroughly.
- Line a baking tray with parchment paper.
- Drop heaped tablespoons of dough onto the tray, forming cookies about 8cm (3 inches) in diameter and 1.5cm (0.5 inches) thick.
- Space cookies apart and bake for 10-12 mins until golden.
- Cool on a rack. Store in an airtight container for up to 3-5 days.
