Vegan Spelt Raisin Cookies

  1. Preheat the oven to 180°C (350°F/Gas 4).
  2. In a bowl, mix 2 Tbsp ground chia seeds with 6 Tbsp water and let sit for 10 mins. Soak sultanas in boiling water for 10 mins.
  3. Cream the chia mixture with sugar. Add cinnamon, vanilla, baking soda, baking powder, salt, and coconut oil. Mix well.
  4. Stir in spelt flakes and spelt flour. Add drained sultanas and blend thoroughly.
  5. Line a baking tray with parchment paper.
  6. Drop heaped tablespoons of dough onto the tray, forming cookies about 8cm (3 inches) in diameter and 1.5cm (0.5 inches) thick.
  7. Space cookies apart and bake for 10-12 mins until golden.
  8. Cool on a rack. Store in an airtight container for up to 3-5 days.
