Chocolate Cake with Coconut Flour

Servings: Approximately 8-10 slices (8 inch single layer cake)
Ingredients:
- ½ cup coconut flour
- 1 teaspoon baking powder
- 6 tablespoons coconut oil melted and cooled
- ½ cup unsweetened cacao powder
- ¾ cup cane sugar
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 6 large eggs
- desiccated coconut for garnish and fruits like raspberries (optional)
Steps:
- Preheat your oven to 350°F (180°C). Grease an 8-inch round cake pan and line it with parchment paper.
- Sift in a medium bowl, coconut flour and baking powder. Mix until well combined
- In another large bowl add melted coconut oil and cacao powder until well blended
- Whisk sugar, vanilla extract, eggs and salt into the larger bowl with the coconut and cacao powder mixture.
- Add dry ingredients into the mixture whisk well until smooth. Let batter rest for 10 mins to allow the coconut flour to absorb some of the moisture.
- Pour the batter into the prepared cake pan. Smooth the top with a spatula. Place it in the preheated oven and bake for 25-30 minutes.
- (To check: Insert a toothpick into the centre, if it comes out clean, the cake is baked)
- Once baked, let it cool in the pan for about 10-15 minutes. Then transfer it to a wire rack to cool completely.
- When ready to eat garnish with desiccated coconut and any fruits.
