Healthy Courgette Fritters Recipe: A Guilt-Free Zucchini Pancake Delight

Ingredients:

  • 2 medium-sized courgettes (zucchinis)
  • 1 teaspoon sea salt
  • 1/2 cup whole wheat flour
  • 1/2 cup grated Parmesan cheese
  • 1 clove of garlic, minced
  • 1/4 cup fresh basil, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Olive oil 
  • Lemon wedges for serving (optional)
  • Greek yogurt or sour cream for dipping (optional)

Instructions:

  1. Grate the courgettes and place the grated courgettes in a colander, sprinkle with salt, and let them sit for about 10 minutes. 
  2. After 10 minutes, use your hands or clean kitchen towel to squeeze and drain the excess liquid from the grated courgettes. 
  3. Combine the drained courgettes, whole wheat flour, grated Parmesan cheese, minced garlic, chopped basil, chopped parsley, black pepper, and eggs. Mix well 
  4. In a large skillet, heat about 1/4 inch of olive oil over medium-high heat until it's hot but not smoking.
  5. Spoon portions of the courgette batter into the hot oil, shaping them into fritters. Fry each side until they are golden brown, about 2-3 minutes per side. 
  6. Place the cooked fritters on a plate lined with paper towels to remove excess oil.
  7. Garnish the hot fritters with fresh herbs and serve with lemon wedges or a dollop of Greek yogurt or sour cream for dipping.
