Healthy Courgette Fritters Recipe: A Guilt-Free Zucchini Pancake Delight

Ingredients:
- 2 medium-sized courgettes (zucchinis)
- 1 teaspoon sea salt
- 1/2 cup whole wheat flour
- 1/2 cup grated Parmesan cheese
- 1 clove of garlic, minced
- 1/4 cup fresh basil, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1/4 teaspoon black pepper
- 2 large eggs
- Olive oil
- Lemon wedges for serving (optional)
- Greek yogurt or sour cream for dipping (optional)

Instructions:
- Grate the courgettes and place the grated courgettes in a colander, sprinkle with salt, and let them sit for about 10 minutes.
- After 10 minutes, use your hands or clean kitchen towel to squeeze and drain the excess liquid from the grated courgettes.
- Combine the drained courgettes, whole wheat flour, grated Parmesan cheese, minced garlic, chopped basil, chopped parsley, black pepper, and eggs. Mix well
- In a large skillet, heat about 1/4 inch of olive oil over medium-high heat until it's hot but not smoking.
- Spoon portions of the courgette batter into the hot oil, shaping them into fritters. Fry each side until they are golden brown, about 2-3 minutes per side.
- Place the cooked fritters on a plate lined with paper towels to remove excess oil.
- Garnish the hot fritters with fresh herbs and serve with lemon wedges or a dollop of Greek yogurt or sour cream for dipping.
