Easy Keto Almond Pancakes

Ingredients:

  • 4 large eggs
  • ¾ cup almond milk 
  • 2 teaspoons vanilla extract 
  • ¼ cup avocado oil 
  • 2 ½ cups (250 grams) blanched almond flour 
  • ¼ cup sweetener 
  • 2 teaspoons sodium bicarbonate 
  • ¼ teaspoon sea salt 
  • Oil for pan 

Method

  1. In a large mixing bowl combine eggs, almond milk, oil and vanilla. (Hand mix or can use a blender). 
  2. Add almond flour, sweetener, sodium bicarbonate and salt to the mixture. Blend or mix until it's smooth. If the batter is too thick add a little more almond milk.
  3. Let the batter rest for 5 minutes. While waiting, heat a large non-stick pan over a medium heat and add a bit of oil. 
  4. Ladle in the batter. Spread them into a circle sizing is up to you. But the usual desired size is 3 or 4 inches. 
  5. Cook pancakes until bubbles begin to appear on tops. Carefully flip the pancakes and continue to cook until golden brown on the second side for another 2 -3 minutes. 
  6. Stack them on a plate and cover with a towel to keep warm. 
  7. Serve with desired toppings.
