Easy Keto Almond Pancakes

Ingredients:
- 4 large eggs
- ¾ cup almond milk
- 2 teaspoons vanilla extract
- ¼ cup avocado oil
- 2 ½ cups (250 grams) blanched almond flour
- ¼ cup sweetener
- 2 teaspoons sodium bicarbonate
- ¼ teaspoon sea salt
- Oil for pan
Method:
- In a large mixing bowl combine eggs, almond milk, oil and vanilla. (Hand mix or can use a blender).
- Add almond flour, sweetener, sodium bicarbonate and salt to the mixture. Blend or mix until it's smooth. If the batter is too thick add a little more almond milk.
- Let the batter rest for 5 minutes. While waiting, heat a large non-stick pan over a medium heat and add a bit of oil.
- Ladle in the batter. Spread them into a circle sizing is up to you. But the usual desired size is 3 or 4 inches.
- Cook pancakes until bubbles begin to appear on tops. Carefully flip the pancakes and continue to cook until golden brown on the second side for another 2 -3 minutes.
- Stack them on a plate and cover with a towel to keep warm.
- Serve with desired toppings.
