Easy Potato Mochi

Easy Potato Mochi

Ingredients:
- 2-3 large potatoes, chopped and peeled (you want about 500g of potato, after being chopped and peeled)
- 4 tablespoons potato starch
- 1/4 teaspoon salt
- Plus some cheese (I used mozzarella, but use your favourite)
- For the sauce:
2 tablespoons soy sauce - 4 tablespoons water
- 2 tablespoons brown sugar
- 20g unsalted butter
Instructions:
1. Fill a pot with water, season with a generous pinch of salt, and bring to a boil.
2. Add the potatoes and cook until they are tender enough to pierce easily with a fork.
3. Drain and transfer to a bowl, then mash thoroughly.
4. Add the potato starch and salt, mixing until a smooth dough forms.
5. Divide the dough into 6–8 portions, depending on your preferred size.
6. Flatten one portion in your hand, place some cheese in the center, and shape it back into a sealed disc, ensuring the cheese is fully enclosed. Repeat with the remaining portions.
7. Heat a little oil in a large pan over medium heat. Cook the potato mochi until both sides are golden brown.
**For the sauce:**
1. Combine all sauce ingredients in a separate pan.
2. Heat over medium heat until slightly thickened.
3. Add the cooked mochi to the sauce and let them simmer for 1–2 minutes per side so they absorb the flavor.
Serve warm.
