Hearty Vegetable Soup

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 2 carrots, peeled and thinly sliced
- 2-3 celery stalks, thinly sliced
- 1 cup soup mix, pre-soaked and rinsed
- 6 cups vegetable stock
- 1 teaspoon salt
- 6-8 silverbeet or kale leaves, shredded
- 1 tablespoon apple cider vinegar or lemon juice
- handful parsley, chopped
Method
- Heat the oil in a large pot over medium heat. Add the onions and cook for about 5 minutes, until softened. Stir in the garlic, cumin, and turmeric, cooking briefly until aromatic.
- Add the carrots, celery, and soup mix, stirring for a minute or two. Pour in the stock and add the salt.
- Cover and bring to a gentle simmer. Cook, stirring occasionally, until the lentils, rice, and quinoa are tender, about 30 minutes. Add the shredded greens and cook for 3–5 minutes, until wilted. Taste and adjust seasoning with more salt and pepper if needed.
- Remove from the heat and stir in the vinegar or lemon juice. Serve topped with parsley, with warm beetroot flatbreads on the side.
