Vegan Coconut Cookies

Ingredients:
- 1 cup unsweetened shredded coconut
- 1 cup old-fashioned oats (rolled oats)
- 2 tsp baking powder
- 1/2 cup organic Sucanat (cane sugar)
- 1 cup pitted dates
- 1 cup dried pitted prunes
- 2 tsp. Vanilla essence
- 2 tablespoon coconut oil (melted)
- 1/2 cup soy milk (regular milk would probably due just fine if that’s how you roll)
Method:
- Preheat your oven to 350°F and line a baking sheet with parchment paper or lightly oil it.
- In a medium bowl, combine the oats, shredded coconut, baking powder, and Sucanat. Set this mixture aside.
- Using a food processor or blender, pulse the dates and prunes until they are finely chopped but not completely smooth. Add this mixture to the dry ingredients in the bowl. Also, add the vanilla, oil, and soy milk. Mix everything until well combined. This may take a few minutes of stirring.
- Shape the mixture into 1 1/2-inch circles using your fingers and place them on the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes or until they are lightly golden brown.
