Hearty Lentil Soup Recipe: A Nutrient-Packed Delight

Ingredients:

  • 1 cup soup mix lentils
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Sea Salt and black pepper 
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes.
  3. Stir in the minced garlic, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until the spices become fragrant.
  4. Add the rinsed lentils, diced tomatoes and the vegetable or chicken broth to the pot. Stir everything well.
  5. Boil the soup and then simmer on low heat for about 20-25 minutes. Stir occasionally to prevent sticking.
  6. Season with salt and black pepper to your liking. 
  7. Squeeze the lemon juice into the soup and stir to combine.
  8. Garnish with fresh parsley or cilantro.
