Ingredients:
- 1 cup soup mix lentils
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 6 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Sea Salt and black pepper
- 2 tablespoons olive oil
- Juice of 1 lemon
- Fresh parsley or cilantro for garnish (optional)

Instructions:
- Heat the olive oil in a large soup pot over medium heat.
- Add the chopped onions, carrots, and celery. Sauté for about 5 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until the spices become fragrant.
- Add the rinsed lentils, diced tomatoes and the vegetable or chicken broth to the pot. Stir everything well.
- Boil the soup and then simmer on low heat for about 20-25 minutes. Stir occasionally to prevent sticking.
- Season with salt and black pepper to your liking.
- Squeeze the lemon juice into the soup and stir to combine.
- Garnish with fresh parsley or cilantro.
